In a skillet, heat olive oil and sauté minced garlic until fragrant.

Combine zucchini, sautéed garlic, cheddar cheese, half of the Parmesan, breadcrumbs, olive oil, salt, and pepper in a bowl.

Sprinkle remaining Parmesan and optional breadcrumbs on top.
