Blackberry Balsamic Grilled Chicken (Print)

# What You'll Need:

→ Blackberry Balsamic Vinaigrette Dressing

01 - 1/2 cup blackberries
02 - 2 tablespoons white balsamic vinegar
03 - 2 tablespoons extra virgin olive oil
04 - 2 tablespoons honey
05 - 2 teaspoons Dijon mustard
06 - 1 teaspoon tamari or soy sauce
07 - 1 large clove garlic, minced
08 - Salt and pepper to taste

→ Fried Goat Cheese

09 - 8 ounces goat cheese, sliced into 1/4-inch-thick discs or formed into small balls
10 - 1/4 cup flour
11 - 1 large egg, lightly beaten
12 - 1 cup panko breadcrumbs or breadcrumbs

→ Salad

13 - 1/2 pound chicken breasts
14 - 6 cups lettuce
15 - 1 cup blackberries
16 - 1 avocado, sliced
17 - 1/4 cup red onion, sliced
18 - 1/4 cup walnuts, pistachios or almonds

# How to Make It:

01 - Puree blackberries, white balsamic vinegar, olive oil, honey, Dijon mustard, tamari or soy sauce, garlic, and salt and pepper in a food processor or blender until smooth.
02 - Dredge goat cheese slices or balls in flour, coat with beaten egg, and cover with breadcrumbs. Fry in oil over medium heat until lightly golden brown. Set aside on paper towels to drain.
03 - Marinate chicken in half of the prepared vinaigrette for 30 minutes to overnight. Grill over medium-high heat for 2-5 minutes per side, until cooked through and slightly charred. Set aside to cool and slice.
04 - Combine lettuce, blackberries, sliced avocado, red onion, walnuts, sliced grilled chicken, and fried goat cheese. Drizzle with remaining vinaigrette and serve immediately.

# Additional Notes:

01 - Best enjoyed while the fried goat cheese is still warm from frying.
02 - Feel free to add sriracha to the dressing for a spicy kick.
03 - Substitute blackberries with other berries like raspberries, blueberries, or strawberries for variety.
