Bruschetta Chicken Tomato Basil (Print)

# What You'll Need:

→ Chicken and Seasonings

01 - 1 pound boneless and skinless chicken breasts or thighs, butterflied or pounded thin
02 - 1 teaspoon Italian seasoning
03 - Salt and pepper to taste

→ Tomato Topping

04 - 2 cups tomatoes, seeded and diced
05 - 1 tablespoon extra virgin olive oil
06 - 1 tablespoon balsamic vinegar
07 - 1 clove garlic, minced or grated
08 - 2 tablespoons red onion, finely diced
09 - 2 tablespoons basil, thinly sliced
10 - Salt and pepper to taste

→ Optional Garnishes

11 - Parmigiano Reggiano (Parmesan), grated
12 - Balsamic glaze, drizzled
13 - 1 tablespoon basil pesto, mixed into the tomatoes

# How to Make It:

01 - Season the chicken with Italian seasoning, salt, and pepper to taste.
02 - Heat olive oil in a pan over medium-high heat. Add the chicken and cook until golden brown on both sides, about 3-5 minutes per side. Remove from heat.
03 - Mix together diced tomatoes, extra virgin olive oil, balsamic vinegar, garlic, onion, basil, salt, and pepper to taste.
04 - Serve the chicken topped with the freshly prepared tomato mixture. Optionally, garnish with Parmesan, balsamic glaze, or basil pesto.

# Additional Notes:

01 - The chicken should be about 1/2 inch thin to cook quickly. Either slice or pound it thin.
02 - Prepare the tomato mixture ahead of time (an hour to a day) to enhance the flavors. Add basil just before serving.
