# What You'll Need:

01 - 1 medium fresh pineapple, peeled and cut into bite-sized chunks
02 - 1 cup shredded coconut (sweetened or unsweetened, based on preference)
03 - 1/4 cup Greek yogurt (optional, for creaminess)
04 - 2 tbsp honey or maple syrup (optional, for added sweetness)
05 - Fresh mint leaves (for garnish, optional)

# How to Make It:

01 - Cut the fresh pineapple into bite-sized chunks and set aside.
02 - In a bowl, mix the shredded coconut with Greek yogurt and honey (if using) until well combined. If you prefer a lighter version, you can skip the yogurt and honey.
03 - Using your hands or a fork, coat each pineapple chunk in the coconut mixture, ensuring they are fully covered. You can also simply roll the pineapple chunks in the shredded coconut if you prefer a more straightforward method.
04 - Place the coated pineapple bites on a serving platter and refrigerate for at least 30 minutes to allow the flavors to meld and the bites to firm up. Garnish with fresh mint leaves if desired before serving.
