Creamy Sausage Cheddar Pasta (Print)

01 - 1 tbsp olive oil
02 - 1 lb smoked kielbasa or turkey/chicken sausage, sliced 1/4 inch thick
03 - 1.5 cups diced onion
04 - 2 cloves garlic, minced
05 - 2 cups low-sodium chicken broth
06 - 10 oz diced tomatoes
07 - 8 oz dry small pasta
08 - 1/2 cup milk or heavy cream
09 - 1/2 tsp salt
10 - 1/2 tsp black pepper
11 - 1 cup shredded Cheddar cheese
12 - 1/3 cup thinly sliced scallions (for garnish)

# How to Make It:

01 - Add olive oil to a 4-5 quart sauté pan over medium-high heat.
02 - Fry the smoked kielbasa and onions until browned.
03 - Add garlic and cook until fragrant, about 30 seconds.
04 - Add chicken broth, diced tomatoes, heavy cream, dry pasta, salt, and pepper.
05 - Simmer mixture for 15 minutes or until the pasta is tender.
06 - Remove skillet from heat and stir in 1/2 cup shredded Cheddar cheese.
07 - Top with the remaining cheese and cover until the cheese is melted, spotty brown, and bubbly.
08 - Sprinkle with sliced scallions for garnish and serve immediately.
