Crispy Greek Tomato Fritters (Print)

01 - 2 large tomatoes (around 250g), finely chopped
02 - 1/2 red onion, finely chopped
03 - 2 large garlic cloves, minced
04 - Zest of 1 lemon
05 - 85g plain flour
06 - 1/2 teaspoon baking powder
07 - 1/2 bunch dill (around 10g), finely chopped
08 - 1/2 bunch parsley (around 15g), finely chopped
09 - 1/2 teaspoon salt, or to taste
10 - Black pepper, to taste
11 - Olive oil for frying

# How to Make It:

01 - Finely chop the tomatoes and place them in a large mixing bowl.
02 - Add the chopped onions, minced garlic, lemon zest, and fresh herbs to the tomatoes. Then mix in the flour, baking powder, salt, and pepper until you have a cohesive dough.
03 - Cover the bottom of a frying pan with olive oil and warm it over medium heat.
04 - Drop heaping tablespoons of the mixture into the hot oil. Fry each fritter for a couple of minutes until golden brown, then flip and cook the other side until equally browned.
05 - Remove from pan and serve while hot and crispy.
