Preheat the oven to 190°C (375°F). Grease a baking dish with olive oil.

Thinly slice the zucchinis and set them aside.

In a large bowl, combine mozzarella cheese, Parmesan cheese, sour cream, mayonnaise, garlic, salt, black pepper, and parsley. Mix until evenly combined.

Arrange half of the zucchini slices in the greased baking dish. Spread half of the cheese mixture over the zucchini slices. Repeat with a second layer of zucchini slices and the remaining mixture.

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
