Easy Crispy Zucchini Fritters (Print)

# What You'll Need:

01 - 3 medium zucchinis, approximately 4 cups, shredded
02 - 1 teaspoon salt
03 - 1/4 cup all-purpose flour
04 - 1/4 cup grated Parmesan cheese
05 - 1 large egg
06 - 2 cloves garlic, minced
07 - 1/4 cup finely chopped green onions or yellow onion
08 - 1/2 teaspoon black pepper
09 - 1/4 teaspoon baking powder, optional
10 - Vegetable oil, for frying

11 - Sour cream or Greek yogurt
12 - Fresh parsley, chopped

# How to Make It:

01 - Shred the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
02 - Squeeze out excess water from the shredded zucchini using a clean kitchen towel or cheesecloth.
03 - In a mixing bowl, combine the zucchini, flour, Parmesan, egg, garlic, green onions, black pepper, and baking powder (if using). Mix until well combined.
04 - Scoop small portions of the mixture and shape into patties, about 2 inches wide.
05 - Heat vegetable oil in a skillet over medium heat. Fry the fritters in batches for 2-3 minutes per side until golden brown and crispy.
06 - Transfer fritters to a plate lined with paper towels to absorb excess oil. Serve warm with sour cream or Greek yogurt, and garnish with fresh parsley.
