# What You'll Need:

01 - 1 1/2 cups all-purpose flour
02 - 1 teaspoon baking powder
03 - 1/4 teaspoon salt
04 - 1/2 cup unsalted butter, softened
05 - 1/2 cup packed light brown sugar
06 - 1 egg
07 - 1 teaspoon vanilla extract
08 - 1/2 teaspoon almond extract

→ Cream Cheese Frosting

09 - 1 (8-ounce) package low-fat cream cheese
10 - 2-3 tablespoons maple syrup or honey
11 - 1 teaspoon vanilla extract
12 - Pinch of fine sea salt

→ Toppings

13 - Fresh strawberries
14 - Fresh blueberries, raspberries, blackberries, or other fruit
15 - Optional fresh honey, for drizzling

# How to Make It:

01 - Heat oven to 350°F. Grease either a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan with cooking spray.
02 - In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
03 - In a large mixing bowl with a stand mixer or hand mixer, beat the butter and sugar together on medium speed until light and fluffy, about 2 minutes. Add the egg, vanilla, and almond extract. Beat on medium speed until completely combined, scraping down the sides partway through if needed. Add in the dry ingredients and beat on low speed until just combined, avoiding over-mixing.
04 - Press the dough evenly into the prepared pan or dish. Use a fork to poke a few holes in the dough to prevent it from bubbling up. Bake for 15-18 minutes, or until the dough is lightly golden. Transfer to a wire baking rack and let cool for 20 minutes.
05 - Whisk together the frosting ingredients in a medium bowl until combined.
06 - Spread the frosting evenly onto the baked cookie crust. Top with your favorite fruit and drizzle with honey if desired. Slice, serve, and enjoy.
