01 - 8 slices bacon, fried crispy
02 - 1/2 large head cauliflower, cut into florets
03 - 1/2 large head broccoli, cut into florets
04 - 1/2 cup sour cream
05 - 1/2 cup mayonnaise
06 - 1 tablespoon heavy cream
07 - 1/4 teaspoon black pepper
08 - 1 cup shredded colby and monterey jack cheese
09 - 1 cup sharp cheddar cheese
10 - 6 tablespoons chopped fresh chives, divided

# How to Make It:

01 - Preheat oven to 370°F.
02 - Fry the bacon in a large skillet until crispy. Remove and crumble. Set aside.
03 - Steam the cauliflower and broccoli florets until tender, about 15 to 20 minutes.
04 - Combine the sour cream, mayonnaise, heavy cream, and black pepper in a large bowl. Add the steamed cauliflower and broccoli, half of the crumbled bacon, 1 cup of sharp cheddar cheese, and 3 tablespoons of chives. Mix well.
05 - Transfer the mixture to a baking dish sprayed with cooking spray. Top with the colby and monterey jack cheese and the remaining half of the crumbled bacon.
06 - Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes or until the cheese is bubbly and begins to brown.
07 - Garnish with the remaining 3 tablespoons of chopped chives. Serve immediately.
