Easy Marinated Tomatoes Garlic Herb (Print)

Fresh tomatoes quickly marinated with garlic, herbs, and balsamic for a bright, summery side or starter.

# What You'll Need:

01 - 4 large ripe tomatoes, firm to the touch
02 - 2 garlic cloves, pressed
03 - 1/4 small white onion, finely diced (or substitute with red or yellow onion)
04 - 1/2 small bunch of fresh dill weed, or substitute with fresh basil, parsley, or cilantro
05 - 1/4 cup extra-virgin olive oil
06 - 2 tablespoons balsamic vinegar
07 - 1 tablespoon honey
08 - Kosher salt and ground black pepper, to taste

# How to Make It:

01 - Slice the tomatoes into 1/3-inch thick slices. Finely chop the garlic cloves, white onion, and herbs of choice (either basil or dill weed).
02 - In a small bowl, mix the garlic, onion, herbs, olive oil, balsamic vinegar, and honey.
03 - Arrange the tomato slices on a shallow platter. Season lightly with Kosher salt and ground black pepper.
04 - Spoon the garlic-herb marinade over the tomato slices.
05 - Cover the platter with cling film and refrigerate for at least 1 hour before serving.

# Additional Notes:

01 - If you do not like dill, substitute it with fresh basil. The dish is equally delicious with a different herb.
02 - Use ripe but firm tomatoes for ideal texture; avoid soft or mushy tomatoes.
03 - Avocado oil can be used as an alternative to olive oil.
