In a blender or food processor, combine the peaches, sugar, water, and lemon juice. Blend until completely smooth.

Pour the mixture into a metal loaf pan or other similar freezer-safe container. Cover with parchment paper or aluminum foil if the container does not have a lid. Place it into the freezer for at least 4 hours.

Remove the sorbet from the freezer and allow it to thaw for 5 minutes before scooping. Enjoy!
