Quick Apricot Chicken Dish (Print)

01 - 1 tablespoon sesame oil or other neutral oil
02 - 1 pound diced chicken breast
03 - 1 small onion, chopped
04 - 1 clove garlic, minced
05 - ⅓ cup orange juice
06 - 1 cup apricot jam or preserves
07 - 2 tablespoons BBQ sauce
08 - 2 tablespoons soy sauce
09 - 1 tablespoon honey

11 - Sesame seeds

# How to Make It:

01 - Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned (it doesn't have to be fully cooked yet). Stir in the onions and garlic, cooking for 1 additional minute.
02 - Pour the orange juice into the pan with the chicken, scraping browned bits off the bottom. Reduce heat to medium. Add apricot jam, BBQ sauce, soy sauce, and honey. Stir well.
03 - Bring the sauce to a simmer, then reduce the heat and gently simmer until the chicken is fully cooked (internal temperature should reach 160°F) and the sauce thickens to your liking. Serve over rice with scallions and sesame seeds if desired.

02 - You can use chicken thighs, wings, or drumsticks instead of diced chicken breast, but adjust the cooking time accordingly.
