Ricotta Pistachio Honey Bites (Print)

# What You'll Need:

→ Dough

01 - 190g all-purpose flour
02 - 60g almond flour
03 - 60g shelled pistachios, finely ground
04 - 120g unsalted butter, softened
05 - 100g granulated sugar
06 - 120g ricotta cheese
07 - 1 large egg
08 - 1 tsp vanilla extract
09 - ½ tsp almond extract (optional)
10 - ½ tsp baking powder
11 - ¼ tsp salt

→ Topping

12 - 60ml honey, for drizzling
13 - Additional chopped pistachios (optional)

# How to Make It:

01 - Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
02 - In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add ricotta cheese, egg, vanilla extract, and almond extract. Mix until smooth.
03 - Gradually add all-purpose flour, almond flour, ground pistachios, baking powder, and salt to the wet mixture. Mix until a soft dough forms.
04 - Roll dough into 1-tablespoon-sized balls and place them on the parchment-lined baking sheet, leaving space between each.
05 - Bake in preheated oven for 12-15 minutes, until the edges are lightly golden. Let the bites cool on the baking sheet for 5 minutes.
06 - While warm, drizzle each bite with honey and sprinkle with additional chopped pistachios, if desired.
07 - Transfer bites to a cooling rack and let cool completely. Serve at room temperature.
