Roll dough into 1-tablespoon-sized balls and place them on the parchment-lined baking sheet, leaving space between each.

Bake in preheated oven for 12-15 minutes, until the edges are lightly golden. Let the bites cool on the baking sheet for 5 minutes.

While warm, drizzle each bite with honey and sprinkle with additional chopped pistachios, if desired.
