01 - 2-3 lb pork loin, trimmed of excess fat
02 - 2 tablespoons vegetable oil

07 - 1 can (23.5 ounces) pineapple chunks with juice

# How to Make It:

01 - Trim the pork loin of excess fat and season with salt and pepper. Set aside.
02 - Heat a large pan over medium-high heat and add vegetable oil. Once the oil is hot, brown the pork loin on each side for 2-4 minutes or until golden.
03 - Place the pork loin into the slow cooker. Rub it with minced garlic, then add soy sauce and pineapple chunks with juice. Evenly distribute brown sugar over the top of the pork.
04 - Put the lid on the slow cooker and cook on low for 6 hours for a soft pork loin that can still be sliced.
05 - For extra soft shredded pork, cook on low for 8-10 hours, occasionally spooning juices over the pork to keep it moist. After shredding, add the pork back to the slow cooker and cook on low for another hour.
06 - Remove the pork loin from the slow cooker, let it rest for 10-15 minutes before slicing, and serve.
