01 - ½ cup peanut butter
02 - ¼ cup soy sauce
03 - ¼ cup chicken broth
04 - 2 tablespoons lime juice
05 - 2 tablespoons honey
06 - 1 teaspoon sriracha or hot sauce
07 - ¾ teaspoon garlic powder
08 - ½ teaspoon toasted sesame oil
09 - ½ teaspoon ground ginger

→ Salad

10 - 4 cups shredded chicken
11 - 4 cups shredded green cabbage
12 - 1 cup shredded red cabbage
13 - 1 red bell pepper, diced
14 - 1 cup julienned carrots
15 - 1 (11 oz.) can mandarin oranges, drained and patted dry
16 - ½ cup sliced green onions
17 - ¼ cup roughly chopped cilantro
18 - ½ cup honey roasted peanuts
19 - 1/3 cup slivered almonds
20 - Optional: Chow Mein noodles, crispy wonton strips, toasted sesame seeds

# How to Make It:

01 - Combine the dressing ingredients in a food processor or whisk them in a large bowl until uniform in consistency. Cover and chill until ready to serve.
02 - Prepare all the salad ingredients by chopping, shredding, and mixing them in a large bowl.
03 - When ready to serve, add the dressing to the salad in increments and toss to coat until you achieve the desired consistency. Serve immediately for best freshness.

# Additional Notes:

01 - To make shredded chicken: Bring 3 chicken breasts to a gentle bubble (a full boil will make chicken tough). Bubble for 15-20 minutes, or until cooked through. Let rest for 5-10 minutes, then use two forks to shred. Season with salt and pepper.
02 - 16 oz. coleslaw mix can substitute for shredded cabbage and carrots.
03 - Rotisserie chicken is a time-saver in this recipe. Alternatively, poach your own chicken.
04 - Use both green and red cabbage for color variation, but all green cabbage may be substituted if desired.
05 - Do not mix dressing with the salad until ready to serve. Chill both separately and toss just before serving to maintain freshness.
