Protein-Packed Greek Chicken Power Bowl (Version for Printing)

# Ingredients You’ll Need:

→ Chicken Marinade

01 - 600 g chicken fillet, diced
02 - 2 large lemons, zested (2 tbsp) and juiced (80 ml)
03 - 4 garlic cloves, minced
04 - 60 ml olive oil
05 - 2 teaspoons dried oregano
06 - 1.5 teaspoons kosher salt
07 - 1 teaspoon paprika
08 - 0.5 teaspoon black pepper

→ Tzatziki

09 - 1 cucumber, grated and squeezed dry
10 - 310 g Greek yogurt
11 - 2 garlic cloves, minced
12 - 2 tablespoons fresh dill, chopped
13 - 15 ml olive oil
14 - 15 ml lemon juice
15 - Salt, to taste

→ Bowl Assembly

16 - 170 g quinoa, uncooked (yields 3 cups cooked)
17 - 2 cups cherry tomatoes, halved
18 - 2 cucumbers, diced
19 - 1 red onion, thinly sliced
20 - 85 g Kalamata olives, pitted and halved
21 - 60 g feta cheese, shredded
22 - Fresh parsley, mint or dill, chopped, for garnish
23 - Extra olive oil, for drizzling

# How to Make It:

01 - Rinse the quinoa thoroughly under cold water, then cook according to package directions until fluffy. Set aside to cool slightly.
02 - Grate cucumber and sprinkle with salt. Allow to sit for 15 minutes, then squeeze out excess moisture. In a bowl, combine the cucumber with Greek yogurt, minced garlic, chopped dill, olive oil, and lemon juice. Season with salt to taste and chill until ready to serve.
03 - In a bowl, combine lemon zest and juice, minced garlic, olive oil, dried oregano, kosher salt, paprika, and black pepper. Add diced chicken fillet and toss well to coat. Cover and refrigerate for at least 30 minutes.
04 - Heat a skillet over medium-high heat with a drizzle of olive oil. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until golden brown and fully cooked. Let rest for 5 minutes.
05 - Divide cooked quinoa between serving bowls. Arrange chicken, cherry tomatoes, diced cucumber, red onion, and Kalamata olives on top. Scatter with shredded feta, add a generous scoop of tzatziki, drizzle with olive oil, and finish with fresh herbs.
