Korean Chicken Tacos Savory Twist (Print)

# What You'll Need:

→ Chicken

01 - 1 tablespoon avocado oil
02 - 1 pound ground chicken
03 - Pinches of salt and pepper
04 - 3 tablespoons low-sodium soy sauce
05 - 2 tablespoons brown sugar
06 - 3 cloves garlic, minced
07 - 1/2 tablespoon ginger paste or 1-inch fresh ginger, grated
08 - 1 tablespoon peanut butter
09 - 1 teaspoon toasted sesame oil
10 - 1 teaspoon sriracha, optional
11 - 3 tablespoons warm water

→ Caramelized Kimchi

12 - 2 cups kimchi, roughly chopped
13 - 2 teaspoons toasted avocado oil
14 - 2 teaspoons brown sugar

→ Tortillas and Toppings

15 - 8 fajita-size (6-inch) flour tortillas
16 - Cucumbers, thinly sliced (julienne)
17 - Carrots, thinly sliced (julienne)
18 - Avocado, sliced
19 - Fresh herbs (cilantro, mint, green onions), chopped
20 - Crushed peanuts
21 - Sriracha mayo (see notes)
22 - Lime wedges

# How to Make It:

01 - Heat 1 tablespoon avocado oil in a medium skillet over medium-high heat. Add the ground chicken and cook, breaking it up with a spatula, until fully cooked through, about 5-6 minutes. Season with pinches of salt and pepper. While cooking, whisk together soy sauce, brown sugar, garlic, ginger paste, peanut butter, sesame oil, sriracha, and warm water until smooth. Reduce heat to low and stir the sauce into the chicken mixture.
02 - Heat 2 teaspoons avocado oil in a small skillet over medium heat. When the oil is hot, add the chopped kimchi. Cook for 5 minutes until most moisture has evaporated. Add brown sugar and cook for another 5 minutes until softened and caramelized. Deglaze the pan with a splash of rice vinegar or water if needed.
03 - Slice cucumbers and carrots into thin strips (julienne). Slice the avocado and chop fresh herbs and peanuts.
04 - Warm tortillas in the oven or microwave. For a charred flavor, grill tortillas for a few seconds on each side directly on a gas flame.
05 - To each tortilla, add a scoop of chicken, spoonful of caramelized kimchi, and pile on fresh veggies, avocado, and herbs. Sprinkle with crushed peanuts, drizzle with sriracha mayo, and finish with a squeeze of lime juice.
