In a large skillet, cook ground sausage over medium-high heat, stirring and crumbling until thoroughly cooked through and no pink remains.

Add coleslaw mix, garlic powder, ginger, and soy sauce to the skillet. Stir well and cook until cabbage is slightly wilted but still retains some crunch, about 3-5 minutes.

Transfer to serving bowls and top with sliced green onions. Drizzle with additional soy sauce (or coconut aminos) if desired.
