01 - 1½ pounds lean ground chicken
02 - ¾ red onion, diced
03 - 1 tablespoon Greek seasoning
04 - ¼ cup Italian parsley, chopped
05 - 2 tablespoons lemon juice

06 - 1 cup grape tomatoes, quartered
07 - 1 cup cucumber, diced
08 - ¼ red onion, diced
09 - 2 tablespoons Italian parsley, chopped
10 - 2 teaspoons red wine vinegar
11 - 1 teaspoon olive oil
12 - ¼ teaspoon salt, or to taste
13 - ¼ teaspoon ground black pepper, or to taste

14 - 6 pita bread rounds
15 - ½ cup tzatziki
16 - 2 cups curly lettuce, chopped
17 - ½ cup feta cheese, crumbled
18 - ¼ cup kalamata olives, sliced

# How to Make It:

01 - In a large skillet, cook the ground chicken with the onion and Greek seasoning over medium-high heat. Break apart the meat with a spatula. Cook for 5–7 minutes until no longer pink. Drain excess liquid, then stir in lemon juice and parsley. Set aside.
02 - In a medium bowl, combine grape tomatoes, diced cucumber, red onion, and parsley. Drizzle olive oil and red wine vinegar over the mixture, then toss to coat. Season with salt and black pepper to taste.
03 - Cut the pita bread rounds in half. Spread tzatziki inside, then layer with Mediterranean ground chicken, chopped lettuce, and cucumber tomato salad. Top with crumbled feta cheese and sliced kalamata olives. Serve immediately.
