Healthy Greek Ground Chicken Bowls (Print)

Chicken bowls with Greek salsa and coconut yogurt tzatziki, served over rice or cauliflower rice.

# What You'll Need:

→ Greek Salsa

01 - 1/2 cucumber, diced
02 - 1/4 red onion, diced
03 - 1/4 cup kalamata olives, sliced
04 - Salt and pepper to taste
05 - Juice of 1/2 lemon
06 - 2 teaspoons fresh dill, chopped
07 - 1 tablespoon fresh parsley, chopped

→ Tzatziki Sauce

08 - 1 cup coconut yogurt
09 - 3 tablespoons cucumber, diced
10 - 2 teaspoons fresh dill
11 - 1 teaspoon garlic powder
12 - Pinch of salt
13 - Juice of 1/4 lemon

→ Chicken Bowls

14 - 2 teaspoons olive oil
15 - 1 pound ground chicken
16 - 2 teaspoons garlic powder
17 - 1 teaspoon onion powder
18 - 1 teaspoon dried oregano
19 - 1 teaspoon dill
20 - 1 tablespoon parsley
21 - Juice of 1/2 lemon
22 - Salt and pepper to taste
23 - Rice or cauliflower rice for serving

# How to Make It:

01 - Combine cucumber, red onion, kalamata olives, salt, pepper, lemon juice, dill, and parsley in a bowl. Toss well to combine and set aside in the fridge to chill.
02 - In a small bowl, mix coconut yogurt, cucumber, dill, garlic powder, salt, and lemon juice. Stir until smooth and combined.
03 - Heat olive oil in a skillet over medium heat. Add ground chicken, garlic powder, onion powder, oregano, dill, parsley, lemon juice, salt, and pepper. Cook while breaking up the meat until fully cooked through.
04 - Layer cooked chicken over rice or cauliflower rice. Top with Greek Salsa and tzatziki sauce. Serve immediately.
